Sustainability in Motion at Pullman Bali Legian Beach
From carbon-conscious dining to conservation and education, a certified journey that continues to evolve
A Living Commitment to Responsible Hospitality
Pullman Bali Legian Beach continues to strengthen its position as a leader in responsible hospitality, building on its Green Globe Certification with expanded initiatives focused on sustainable dining, carbon footprint reduction, animal conservation, and education. Recognized as one of the pioneering properties in Bali region to achieve Green Globe Certification, the resort moves into 2025–2026 with a clear message: certification is not the destination, progress is.
Guided by the four Green Globe pillars of Sustainable Management, Environmental Stewardship, Cultural Heritage, and Socio-Economic Contribution, sustainability remains deeply embedded in the resort’s daily operations. Every decision, from guest experiences to kitchen practices and community partnerships, reflects a long-term commitment to balancing performance with purpose.
“Certification at Pullman Bali Legian Beach is not treated as a standalone achievement, but as an ongoing responsibility,” said Ravi Khubchandani, General Manager of Pullman Bali Legian Beach. “Green Globe Certification provides a strong framework, but what matters most is how those principles are brought to life every day through conscious choices, continuous improvement, and meaningful engagement with the environment and the community.”
Rethinking Dining Through a Sustainability Lens
Sustainable dining plays a growing role in this journey. Pullman Bali Legian Beach continues to reduce its carbon footprint through responsible menu design and mindful sourcing, prioritizing local, seasonal, and sustainably produced ingredients that support regional farmers while lowering transportation emissions. In line with Accor’s Food for Change initiative, the resort limits the use of high-impact proteins and places greater emphasis on plant-based and sustainable seafood options, with more than a quarter of its menu featuring vegetarian or vegan dishes. In collaboration with ‘Foodsteps’, each dish is assessed for its environmental impact and presented with a carbon footprint rating, offering guests clear information to make conscious dining choices without sacrificing quality or enjoyment. Sustainability messaging across dining venues reinforces the idea that every meal contributes to a broader environmental goal.
Behind the scenes, zero-waste kitchen practices continue to evolve. Ingredients are used in full, with fruit peels repurposed into condiments and vegetable peels into chips. Portion-control strategies and carefully selected crockery designs help reduce food waste while maintaining a premium dining experience. These practices are supported by ‘Winnow Smart Food Waste System’, which tracks food waste in real time and provides data-driven insights to optimize purchasing, portioning, and menu planning. The result is greater efficiency, reduced waste, and measurable environmental impact.
Sustainability is also shaped by people. Weekly ‘No Bin Day’ initiatives encourage employees to take only what they can finish, fostering mindfulness and accountability through simple, everyday actions. Food waste reduction efforts are further strengthened through national and international collaborations under the ‘GRASP 2030’ (Gotong Royong Atasi Susut dan Sisa Pangan di tahun 2030) program, alongside partners including WRAP (The Waste and Resources Action Programme), the ‘IFWC’ (International Food Waste Coalition), and Scholars of Sustenance. These partnerships position Pullman Bali Legian Beach at the forefront of responsible dining transformation within Indonesia’s hospitality sector.
Environmental Stewardship Beyond the Plate
Environmental stewardship extends beyond the kitchen. Across the resort, native plants fill tropical gardens that support birds, butterflies, and small wildlife, complemented by informational signage introducing local flora. This spirit is brought to life at the resort’s ’GAIA – Harmony Park’, where bee conservation initiatives support native Balinese pollinators through the creation of micro-habitats in collaboration with local eco-farmers, alongside small animal conservation areas featuring rabbits, guinea pigs, and guinea fowl. The park is also home to ’Chef Wayan’s Herb Garden, supplying homegrown lemongrass, ginger, and shallots cultivated by the culinary team for daily use.
Water management remains another key focus. The installation of biopores and infiltration wells across the property supports groundwater replenishment, reduces surface runoff, and prevents soil erosion. These natural systems strengthen long-term environmental resilience while supporting the surrounding ecosystem.
Community, Culture, and Lasting Impact
Social sustainability continues to shape the resort’s community engagement. Through ongoing support of the Sanggar Bedugul Program, Pullman Bali Legian Beach provides underprivileged children in rural Bali with access to education, learning resources, and practical skills training. Programs focus on English, mathematics, hygiene, and basic cooking skills, while creative workshops, mentoring, and educational visits help build confidence and curiosity among young learners.
Cultural heritage remains deeply respected and actively preserved. The resort’s Balinese Hindu temple serves as a daily place of worship and community gathering, reflecting the ‘Tri Hita Karana’ philosophy of harmony between people, nature, and the divine. Annual ‘Odalan’ ceremonies bring local musicians, dancers, and artisans together, inviting guests to witness and understand the meaning behind Bali’s sacred traditions. Creative initiatives such as the ‘Pullman Artist Arena’ and cultural showcases like ‘Batik Beyond Borders’ further position Pullman Bali Legian Beach as a platform for local art, craftsmanship, and contemporary expression.
Through its signature ’Pullman Green Heart’ program, Pullman Bali Legian Beach brings together Heartists, guests, and community partners in collective action for environmental and social good. The resort works closely with local organizations, non-profits, and social enterprises, regularly organizing charity drives and donation initiatives supporting orphanages and foundations such as Eben Haezer, Annika Linden, and SOS Bali, with contributions focused on education, nutrition, and wellness. As an annual highlight, ‘Pullman Green Heart’ encourages guests and Heartists to donate pre-loved items including clothing, books, and toys, which are reused or redistributed to communities in need, transforming simple acts of giving into meaningful impact while fostering awareness around recycling, mindful consumption, and compassion-driven sustainability.
As a Green Globe–certified resort, Pullman Bali Legian Beach continues to move forward with purpose. From carbon-conscious dining and zero-waste kitchens to conservation, education, and cultural preservation, every initiative reflects a belief that luxury and sustainability thrive best together. Looking ahead, the resort remains focused on strengthening its sustainability roadmap for the years ahead, with continued efforts to reduce environmental impact, deepen community partnerships, and create meaningful experiences that care for both people and place.
